Tomorrow is national Heritage day, which actually started its life out as a Kwa-Zulu Natal holiday focused on King Shaka. It’s now been appropriated, in the spirit of unity, as National Braai. I’m certain that it was somehow mandated by South Africa’s meat industry, but I digress; who doesn’t love a braai..except for those pale waifish vegans, of course.

In the spirit of Braai day…and because I like sitting around a fire drinking beer, I’ll be spending much of tomorrow flipping steaks, lamb chops, pork rashers and ‘n klein bietjie wors (what? I’m Asian!) on a nicely heated grill. If I can find ‘em, I’ll be grabbing a few skilpadjies too; minced up lamb’s liver parcels wrapped in the caul fat. They’re just fantastic on a braai. The stuff will drive your cholesterol through the roof and may lead to a heart attack, but by god it’s delicious.

      Have been marinating a butterflied skaapboud since Sunday which will be the mains with big mushrooms and as-patat.

      Doing some boeries and rump for appetizer and entrées.

      Still need to decide on desert, something in Dutch Oven.

            It’s basically bread that you braai on the coals, what you put in is up to you. I usually just do the dough and soak it with apricot jam, what ever the person want inside they put in themselves after it leaves the braai.

            Ok, fair enough. Jam too sweet for me, but I get the idea. Do you buy the dough or make it at home? I may just make it, If I do not play in a chess tournament.

            Ain’t nobody got time for making dough. I usually buy it but the bread dough, not the pastry dough. If I have the time I usually bake a bread with bits of bacon and feta inside the dough, then bake it in the oven. Heavenly.

            Making dough not so bad: two options
            1) Breadmaker
            2) Kenwood chef, bit more work, but some very nice dough

            Have people round for breakfast, start cooking the bread 15 minutes before they come. Hmm, very nice.

            Can buy ready made bread dough (I mix in some flour to make it less sticky) at the shop but real easy to make.

            Packet of yeast, 1kg to 1.5kg white flour, spoon of sugar, mix in some warm water until you have a firm and not sticky dough. Let is rise for hour+, Kneed it down and make squares. Let rise again for hour.

            On to medium low heat coals, turn regularly until nice and brown on the outside. When you flick it with you finger it should have a hollow sound.

            Serve hot with jam, bacon, cheese, wors or on its own.

            Mix a bit of garlic in, make small half size rolls and chuck it on, can’t go wrong. Also make sure the heat is low.

          That isn’t roosterkoek.

          Roosterkoek is white bread dough (I make mine slightly sweeter and drier than regular dough) you bake/grill on the rooster.

          You can put the same dough on a stok and spit it, then it is called stokbrood.

    Why are all the videos more than 10 minutes long? I want a hurried 2-3 minutes video of a game, I don’t want to see 10 minutes of any game I want to play those 10 minutes myself!!! I don’t get this trend at all……….

    I was considering rump steak: cover it with butter and spices and put it on the fire. Take it off damn quickly and put it back. Rinse and repeat a few time. Flame grilled meat, with juice ON THE INSIDE, still tender and pink.

    Must pay careful attention………
