I love tacos. And no, I don’t mean those crisp and crunchy corn shells we tend to get around here. I mean, I’m not wholly against that Tex-Mex stuff; it’s a perfectly serviceable snack, those crunchy things that taste like giant big korn bites, filled with spicy mince, shredded lettuce, guacamole, sour cream and liberal amounts of cheese. Those are alright. What I really love though, are proper tacos.
Soft, warm flour or corn tortillas, topped with fillings that are usually undeniably fresh; a bit of coriander (or cilantro, if you prefer), an invigorating squeeze of lime and salsa fresca over pork carnitas? That’s the sort of stuff that makes me a happy man. Even better? Tacos Cabeza – where the meat comes from a roasted cows head; tongue, lips, cheeks – you get the idea. It sounds gross, but it’s magical.
