Biltong

I don’t think there’s any one food that shouts South African more distinctly than a piece of fresh Biltong. There’s just something magical about dipping your hand into a brown packet filled with the shredded remains of something that used to be not dead, seasoned and aged to that perfect sweet spot between raw and dry.

Personally, I’m a fan of the ol’ kudu biltong. Particularly a big piece of it with zero fat on the side, that I can casually slice small slivers off of with a small knife. What’s your favourite biltong? And remember, there’s only wrong answer to this question is “none”.

      No. If you can taste the blood, it’s not ready yet. But if it’s dry, it’s way too far gone. You have to get it right in the middle. See the header pic.

    When I’m doubting my masculinity then I need a solid slab of spiced beef biltong that I can hack at with my manly knife…

    other times I just like chilli stokkies…

    but in reality I’ll eat any biltong, I’m not fussy

        I make my own Biltong in my garage… mainly from beef I buy but sometimes from the pets I find in the area

            My dad made biltong old school style.

            Shot a duiker, process the meat (mostly biltong cuts, the rest usually went into pies).

            Every morning before the sun went up we hanged the biltong pieces on long clothesline and took it down again before it got to hot and made the outside to hard before it dried properly right through.

            The bottom dries faster than the rest so each day every piece got a little bit shorter, best biltong ever.

    Sad story.

    So, last week, I want to make some Gemsbok wors for supper. Keep the toddler and the very pregnant wife fed and all. I get home late from work, I grab some wors, defrost it, and, without even looking dump it all in a pan. This wors did not look like the other wors. It was rectangular and long. Um.So, there goes about half the Gemsbok meat we must make into biltong. Ouch!

    Talk about feeling like a chop, hey.
