Last week, I left Darryn in charge of Tasty Tuesday…and he assaulted it with goddamned dunked wings from KFC. It’s the very definition of sacrilege if you ask me – so this week, we’re sticking with chicken. Only we’re not drowning it in grease and bloody barbecue sauce.
Here’s a lighter, healthier and infinitely tastier chicken saltimbocca. While saltimbocca s traditionally reserved for veal, it works perfectly with chicken. Pounded flat, dressed with a sage leaf and wrapped up in deliciously thin prosciutto and lightly pan-fried to perfection. Here, it’s further enhanced by a light lemon-based sauce. Saltimbocca literally means “jumps in the mouth,” – and for good reason; it’s bloody delicious.
