I don’t think there’s any greater contribution to the culinary arts, than bacon. It’s a meal that has been around since god knows when, a dish fit for kings and easily acquired by peasants. Whether you like it as limp or crispy, you can’t possibly go wrong with bacon.
The best bacon that I’ve ever had, came from a stay at the Anaheim Hilton last year during BlizzCon. It was crispy, but not hardened to a point that it would break your teeth. It was candied, but still maintaining enough of that gloriously unhealthy oil to give it that extra flavour,making for a popular dish that had people lining up. I’ve also encountered some absolutely dazzling (and similar) pork rashers from my local butcher, which I’ve braaied and feasted on, with tears running down my face thanks to the sheer burst of flavour. So braai or fry, you can’t go wrong with bacon. [Ed’s note: Yes, bacon is grand, delicious stuff – but the internet’s fascination with this fine cured meat makes no sense]
